The Modern Stone Age Kitchen is a sourdough bakery, scratch-made restaurant, and teaching kitchen in Chestertown, Maryland, rooted in the belief that real nourishment comes from traditional food-processing techniques and transparent sourcing. Founded by Dr. Bill and Christina Schindler, our work bridges anthropology, regenerative agriculture, and modern culinary practice to create food that is as ethical and sustainable as it is delicious.
We partner closely with local farmers and producers who prioritize soil health, animal welfare, and responsible land stewardship. Our kitchen relies on nose-to-tail butchering, fermentation, nixtamalization, wild sourdough, and other ancestral techniques that maximize nutrient availability while minimizing waste. Every item - from our long-fermented breads and pastries to our house-cured meats, broths, and cheeses - is made 100% from scratch with ingredients chosen for integrity, not convenience.
Our goal is simple: to help families eat better by transforming familiar foods into their most nourishing versions. We proudly support regional agriculture, teach the value of whole-animal use through the Modern Stone Age Food Lab, and create a community hub where real food and regenerative principles guide every decision.
